Living without you is a life of grey.

Color is rare and unseen.

White Chicken Chili

 

White Chicken Chili

4 chicken breast

2 to 4 cups of water

2 cloves Chopped garlic

1 cup of green onions diced

2 teaspoons ground cumin

3 bouillon cubes

1 can green Chile enchilada sauce

2 cans of northern beans drained

1 can of corn (drained)

Salt and pepper to taste

In a large stock pot cook chicken until tender.

Remove from the stock .  Dice or shred finely. Add the chicken and rest of the ingredients back to the stock. Simmer for about 30 minutes. Top with shredded cheese and sour cream. Serve over Mexican rice,  top with crushed tortilla chips, cheese, sour cream and flour tortillas.

       This a SUPER easy dish that is even better the next day in a Burrito!
       I serve it topped with lettuce, tomato, sour cream and black olives….
       with Chips on the side….
       My mom makes this without the green sauce so it isn’t as spicy!

  • Preheat 350
  • Greased casserole dish
  • Layer the following ingredients
  • Bag of hashbrowns…
  • Cooked taco meat……
  • Crushed tortilla chips
  • Cheese…
  • Green chili sauce…
  • More cheese!
  • Green onion!

 

Bake covered for about 30 minutes…
Remove foil and brown the top!

Cooked spaghetti

Your favorite pasta sauce

Mushrooms       

 Olives

 Mozzarella

Pepperoni

 Bake at 350 until the roni’s are crispy!!!!

Lima Bean and Tater Stew

Lima Bean and Tater Stew…

1 bag dry lima beans
1 onion chopped
tsp. tony
tsp. garlic powder
pepper to taste
tbsp. sugar
half a stick of butter
4 potatoes peeled and cubed
1 packed of smoked sausage

(I pressure cook)
in a pressure cooker add about 4 cups of water
and 1st 5 ingredients
pressure cook
for about 15 minutes

add potatoes when done
pressure cook again for about 6 minutes
add sausage, sugar and butter
let shimmer all together for about 25 minutes….

serve over rice with cornbread….

YUMMY!!!!!

Chicken Elbows

 

 

Chicken Elbows

2 to 4 chicken breast

3 bouillon cubes

1 clove of garlic chopped

½ cup of green onion sliced

1 can cream of mushroom

1 can cream of chicken

1 cup chopped celery

Sliced carrots

Half a box of elbow noodles

Salt pepper to taste (but the more pepper the better I think!)

In a large stew pot boil chicken (enough water to cover the chicken…about 3 to 4 cups) cook until done. Remove chicken and dice. Add the rest of the ingredients to the stock bring to a boil

Reduce heat and cover. Simmer and stir until the carrots are tender and the noodles are done.

Its that time again!!! THANK GOODNESS!

is it labor day yet?

for these kids are driving me insane…

if i step on another lego,

if  i hear another “WELL HE STARTED IT!” blame…

i might just do something crazy….

lock them outside or give them away,

i’ve even found myself pondering the idea….

“can you can post and sell children on Ebay?”

all summer i have listened,

to the melody of two bickering boys…

been a referee, a scoring judge,

the giver and taker of their toys…

my summer has become nothing more,

than one over priced wrestling match…

and i’m in dyer need of the Hulksters help,

pinned down for the count here on the mat…

i’ve been scrubbing kool-aid stains,

instead of basking in the sun….

i’ve been ignored, become the target,

of their high-caliber nerf dart guns….

i’m so sick of Pokemon,

yet i find myself singing the theme…

i know all the words from high-school musical

and the choreography of every dance scene….

i’ve cleaned their rooms a thousand times,

yet both are in total disarray….

if i had a dollar for every trading card i’ve found,

i’d own  Magaritaville, and be wasting  away…

i’ve been force fed sponge-bob so much

i’m envious of Patrick’s rock home….

what i wouldn’t give to hide beneath it

oh to have my own fry cook and  ten minutes alone!!!!

 

STOP JUMPING ON THE COUCH….

REMEMBER BIG BOYS, THEY DON’T CRY!!!

i’ve been pulled on and interrupted…

just to see a toy advertised…

my hair is a mess, my voice is gone,

periodically i burst out and cry…..

so is it time for school yet?

for my patience has flat-lined….

maybe i’ll drop them off a day early

to get some much needed “mommy alone time”!
